I see recipes that call for Onions or Scallions a lot, are they interchangeable?

Scallions have the most mild flavor and are usually diced fine, green onions have a milder taste than most onions; however, the Walla Walla Sweets and Valadia onions are the sweetest of the larger onions. Red onions can add nice color and are generally sweeter tasting.
Remember with any of these varieties you can adjust the quantity or type depending on the strength of the taste. Experiment and find which works best for you. You may find you like to have several different types for different recipes.
