I have seen a lot of mention of Quinoa lately, what is it?

Quinoa (Kee NO) is a type of wheat found in South America. It is gaining popularity in the United States as a rice substitute due to its lack of starch and high protein content.
Quinoa can be used any way you would normally use rice including stir fries. It cooks quickly and has a fluffier texture than rice but is deceptively filling. You can find Quinoa in most groceries in the health food sections. Also, costco has begun carrying the grain as well. Follow instructions on the packaging as too much liquid can make it soggy.
To add more flavor to quinoa, it may be cooked with broth instead of water.
