Is there an easy way to peel especially hot peppers?

It is a good idea to wear gloves when handling chili peppers because the capsason can burn your skin or eyes.
To skin the chilis you need to sear the skin so that it is totally black but not ashy. As long as the skin is just black the pepper will not burn. You can sear the chilis on a grill, gas stove, broiler, dry cast iron pan.
After the skin is seared put the chili immediately into a plastic or paper bag and seal. The steam from the chili helps loosen the skin. Let chili cool to touch and rub the skin off. It will help to have cold running water to wash away the skin as it comes off the chili.
